For the Maya, cacao was more than just food. It was an offering to the gods, a symbol of wealth, and a sacred beverage. The Maya cultivated cacao in their gardens and processed it carefully to obtain the divine liquid known as xocolātl. This beverage, sweetened with honey and spices, was served in religious ceremonies and important celebrations.

Cacao was intrinsically linked to Maya daily life and spirituality. Its intense flavor and silky texture served as a bridge between the earthly and celestial realms. The Maya believed that cacao possessed magical and healing properties, and its consumption was reserved for nobles and priests.

The process of cocoa

Cultivation and Harvest: The Maya cultivated cacao in their orchards, tending to each tree with reverence. The cocoa pods, oval-shaped and vibrant in color, were harvested when ripe. The Maya believed that gods resided within these pods, and their opening was a sacred act.

Fermentation and Drying: The cocoa seeds were extracted from the pods and left to ferment. This process developed the flavors and reduced bitterness. Afterward, the seeds were dried in the sun, ready for the next step.

Roasting and Grinding: The Maya roasted the seeds on stone comals, releasing deep aromas. Afterwards, they ground them on stone metates, creating a thick paste called cocoa massThis dough was mixed with water and spices to obtain xocolātl.

Sacred Xocolātl: The xocolātl was a dense and frothy drink. It was served in gourds and shared during religious ceremonies, divination rituals, and celebrations. The Maya believed that xocolātl strengthened the spirit and connected them with the gods.
